Anselmi I Capitelli is 100% Garganega wine and has a cellar life of about 25 years.
This is a complex and sweet wine which goes well with lobster, excellent with Pate de Foie Gras, and as an accompaniment to final dinner courses such as cheese and pastries.
Anselmi I Capitelli undergoes meticulous cultivation, harvesting and vinification processes to produce an excellent and very sophisticated sweet style.
At harvest, only the most mature grape bunches are selected and collected in one layer in small trays to keep the fruit in pristine condition. After the grapes reach the winery they are picked over again carefully, separated from each other and left to dry in ventilated rooms. In December, the bunches have the right amount of “noble rot” vinification, which is a process that concentrates the sugars and flavours in the drying fruit to create luxurious textures and long, lifted complexity for concentrated sweet wines.
After pneumatic pressing at the end of December, the very sweet must is left to ferment in small oak barrels after which it is decanted twice and then left to mature for 8 months in the same barriques.
