Carmelo D’Aquino had a vision, to produce wine for the people of Orange. This dream was realised in 1946 when, in a tin shed, he produced six barrels of wine, becoming the first winemaking family of Orange. Today Highland Heritage Esate stands in testament to his efforts and takes pride of place at the gateway of the region.

This wine has warm plum & deep cherry with youthful purple hues. The wine demonstrates the benefits of using many traditional French Burgundy winemaking techniques, compromising of barrel fermentation, extended lees and skin contact, malolactic fermentation and hot fermentation. These methods have produced a very complex wine, showing cherry, spice and strawberry like varietal fruit aromas with ‘sweet’ vanillin oak characters derived from barrel fermentation and storage in French oak for 19 months.

A full flavoured, medium bodied wine, with great length and solid structure, offering soft cherry and plum like ripe Pinot Noir flavours, complemented by fine grain tannins and attractive lingering French Oak characters. This wine provides immediate drinking pleasure , or alternatively, it will continue to gain complexity with up to 10 years cellaring.

Perfect with veal, duck, light pasta and mild cheeses.
